Pistou is the traditional Provençal mixture of basil and garlic, which has been united with the green Moroccan Beldi olives and the purple Cuquillo Niçoise olives from Spain (both are pitted). Their clean, crisp taste works wonderfully with the traditional Mediterranean flavours of the Pistou.
