Roasted Chicken Al-Kabsa (Gluten Free)

MAIN INGREDIENT: Poussin ( Spring Young Chicken ) 650gm from France
Part-1 Kabsa with carrot (Not spicy)
Ingredients
- 1 1⁄2cups basmati rice
- 1medium carrot, shredded
- 1⁄2teaspoon kabsa spice mix - ( Just mix & grind the following to get Kabsa Mix :- 1teaspoon turmeric, 1teaspoon coriander seed, 1teaspoon black peppercorns(1/2 tbs if you don't want it hot), 1teaspoon black cardamom pod, 1teaspoon ginger , 1teaspoon fennel seed )
- fresh ground black pepper
- 1/2 teaspoon Maldon Sea Salt
- 2 3⁄4cups chicken stock
- 1⁄4cup pine nuts
- Other nuts if needed

Part-2 Roasted Chicken
Ingredients
- 1whole Poussin or Spring Young Chicken, cut into 4
- 3tablespoons olive oil
- 1⁄8teaspoon turmeric
- 1⁄2teaspoon baharat (Baharat Aka Middle East Mixed Spices - the Real Mix)
- 1⁄2teaspoon kabsa spice mix (Saudi Kabsa Spice Mix) - ( Just mix & grind the following to get Kabsla Mix :- 1teaspoon turmeric, 1teaspoon coriander seed, 1teaspoon black peppercorns(1/2 tbs if you don't want it hot), 1teaspoon black cardamom pod, 1teaspoon ginger , 1teaspoon fennel seed )
- 1/2 teaspoon Maldon Sea Salt
- 3cilantro, springs
DIRECTIONS
MIXING DIRECTIONS
Spread the Kabsa in a serving dish with Roasted chicken on top. You can also garnish it with crushed nuts. Serve it with arabic vegetable salad and/or plain/seasoned yogurt
